Chillaxing!!!

This year the holidays have been great.  After some of the personal stuff I went through in 2010, I decided it was a time to relax and reflect…….so hanging with the kids, eating, reading, watching movies (which I seldom do), more eating, sleeping, walking the dog and learning how to use my new camera.  It’s been awesome!!!!

Recharging and renewing oneself at times is great.  Winter is about going within, at least some time and that is what I have been doing.  I am now recharged and looking so forward to Thriving in 2011!!!!  Also, creating better photos especially of all the new recipes coming so that you will be even more tempted to try new recipes and choose eating healthy more often.

As 2010 comes to an end, expect only great things for 2011, set your intention, get focused, have fun and live life.

I wish you all the best in 2011, have a fantastic and safe NY’s celebration no matter where you are or what you are doing.

And a BIG thank you for being part of my blog, I greatly appreciate that and you!!

Merry Christmas!!!

Merry Christmas!!!

It’s the morning of Christmas Eve and I have been in my kitchen this morning making some raw chocolate treats to share with good friends today.  I am still working on perfecting the recipe and I think I am pretty close!!!

I just wanted to say a BIG thank you to all who have stopped by, left comments and sent me emails………greatly appreciated!!!   The winner of the Metagreens is Peggy……Congratulations and I will be in touch Peggy.

It does not look like Christmas is here at all, it’s raining hard and windy, but inside the tree is up, lights on and I did no Christmas baking this year, my first ever, and I’m ok with that.  I decided Christmas will come and go whether I do it or not and I was not going to stress this year to try and make everything perfect……….I am learning to love what is.  What a huge weight lifted off the shoulders!!!

Enjoy today, tonight, tomorrow and the rest of the holidays.  Have fun, laugh, don’t worry if it doesn’t get done or it’s not perfect, eat well and love.  Create wonderful memories.

I have amazing memories of Christmas’s growing up in Ontario, now I am making my own traditions with my kids and friends.  I hope you are too!!!

Chocolate, Banana & Coconut Smoothie

I seem to be on a Chocolate theme this month, so I’ve added in with my smoothie too!!

Maybe it’s because for the first time I have not been baking up all the treats I usually do!!  I was in the big city the other day and not only did I find young coconuts but a big sale on them as well,  so todays smoothie does have coconut meat in it, which is very good for us, but you don’t have to use it if it’s not available to you.

Chocolate, Banana & Coconut Smoothie

2 Bananas

2 handfuls Spinach

Flesh of young coconut (optional – if you don’t have or want to use Coconut just add more

almond milk)

Almond Milk

1 – 2 Tbsps Raw Cacao Nibs or Powder

Blend up until smooth, makes 2 servings so share with a friend and enjoy!!

Extras

I sometimes add in other things to get more from my smoothies or hide things from my kids (heehee) so that we all get more nutrition, here are a few ideas

Maca

Spirulina

Meta Greens

Aloe

or anything else you feel  or like to add in as blending it in a smoothie makes it easier to digest and gest in our system faster!

New Beginnings

I had the privilege of being at my friends house the other day who just gave birth to a beautiful baby boy.

He was only, not even 2 days old and  he was born the day before my birthday, so another Sagg is in the world and we rock!!!!

Jane looked beautiful too, and as moms we know what your body goes through, but she really did.

It really got me thinking though, about  how precious life is.  How we all come into the world totally dependent and I believe pure and innocent and through our parents, teachers and friends things change.  Don’t get me wrong, people mean well, but ideas, beliefs, what we should be doing are  put at us and we morph and change and grow up into adults, where I see that we become disconnected and unsure.

We’re not always sure who we are, what we want or what we should be doing.  We get caught up in the material side of things as we are inendated with commercials about it never being good enough, big enough, small enough, fast enough or new enough no matter what it is.  We have models on tons of magazines that have a ton of make up and have been photoshoped till they are no longer recognizable……..go figure.  It’s everywhere saying ‘You’re not good enough just as you are’.

But you are!!!

And the good news is we can choose to start over any time.  Whether it’s our diets, I really don’t like that word, so way of eating, lifestyle, our jobs or how we choose to spend our time, how much money we make, who our friends are, where we live and even who we are married to.

Sometimes endings have to happen to have new beginnings.

I leave you with this thought, are you doing, being, having and feeling what is really inside of you?  Your passions, are they still inside waiting to come out, are you nurturing them or do you even remember what they are?

Does your life look like ground hog day?  Is it one of quiet desperation?  Or are you living, walking and feeling your truth, in your power and loving each moment and what is?

We are coming up to Winter Solstice, the full moon and a lunar eclipse all on the 21st of December, which will also be the shortest day of the year.   It will be a good time to go in, reflect, ask yourself some really good questions and set your intentions for 2011, whether it be your relationships, health, your job or life in general.

Remember, everything is energy and we create what we think about.  As The Universe tells us in their daily notes,  Thoughts Become Things so Choose the Good Ones!!!!

On that note, have a beautiful day!!!

Gratitude

Gratitude……..I

choose this today as yesterday was my birthday and I had a fabulous day!!! I had to deal with a couple of things that I really wasn’t looking forward to, but they turned out well…….thank you!
I started my day with a beautiful walk on the beach with my dog Spirit.
I got to have tea with one of my BFF’s where we could really be open and honest and share……some good and not so good, but very important lessons.
I was feeling amazing and healthy all day.
I got to have a beautiful supper, that was prepared with love from some very special friends that remembered I eat raw even though they don’t, she prepared one of my favorite dishes!! My kids were with me and some good friends.
We ate.
We laughed.
I got to open presents and have Happy Birthday sung to me and eat Chocolate Cheesecake…….yes it was raw!!
Oh, and I didn’t have to do any of the dishes or cooking or cleaning……..how good is that??
Sometimes it the small things that count, like beautiful sunsets, friends, good laughs and not having to do dishes that make the best memories.
Being present, being grateful and loving what is………is just doesn’t get any better than that!!!

Raw Eggnog Cheesecake

The days are counting down as we get closer to Christmas.  The lights are up and everywhere is decorated so nicely this time of year.  We have no snow here, but have been having lots of rain, with a mixture of sun and whatever through the day, it really doesn’t know what it wants to do here during the day!!

Raw Eggnog Cheesecake

Crust

1 3/4 cups almonds, ground up in processor

Add in 1 tbsp vanilla

pinch sea salt

6 – 8 dates (more could be added if not sticking together and raisins can be substituted for dates)

Mix together until crumbly yet it sticks together.

Put into bottom of pan, you can use either a rectangle pan or a spring form one.  Spread out evenly and press down firmly until bottom is covered well.

Filling

3 cups soaked cashews (soak for several hours, I soak them overnight usually)

2 cups almond milk

3/4 cup honey (you can use maple syrup (not raw) or agave)

1 tsp lemon juice

1/2 cup coco butter melted

1/4 cup coconut oil (melted if you like)

3 tbsp lecithin

11/2 tbsp cinnamon

1 tsp nutmeg

1/4 tsp ginger

Put all ingredients in blender and blend until smooth.  That could take a few minutes depending on your blender.  If it’s having a hard time divide the filling into 3 batches and blend it up that way. Pour onto crust after each one is blended then lightly mix together.

Put in freezer if like for about an hour, then into the fridge or put directly into fridge.

Enjoy!!

Eggless Nog

Love Eggnog, but want a healthier or raw version??

Eggless Nog

21/2 cups almonds soaked overnight or a couple of hours (or brazil nuts)

4 dates

3 tbsp honey

1/2 tsp vanilla

2 cups water

cinnamon

nutmeg

cloves to taste

Put all ingredients in your blender and blend up well.

Strain through nut bag and enjoy.

I have been playing with some chocolate recipes and am finally finding one that is working.  When I really have it I will share it, there may be some tweaking needed still.  These chocolates have some good things in them like goji berries, almonds, maca and meta greens and they are raw!!!

Raw cacao has PEA in it, leaves you feeling more love, that is why chocolates are so popular for Valentines Day.  Some raw foodists don’t agree that it’s good.  I believe that some here and there is fine.  Anything that we over indulge with is never good.

Raw Shortbread Cookies

Shortbread cookies used to be one of my favorite treats around the holidays.  Memories of making them and sugar cookies with my mom when I was little always brings a smile to my face.  Wanted to try something different this year so here is what I came up with, I think this could be as close as I can get to the real thing.

Raw Shortbread Cookies                                                                                                

This recipe is actually made with chocolate but you can make them plain.

2 cups almonds

Add hot water and let sit for a couple of minutes, drain and removes the skins.

1/2 cup coconut oil

1 tsp vanilla

1/2 cup raw cocoa powder (or omit this and add 1/2 cup more almonds)

Pat almonds dry and put in processor and process until fine.

Put all ingredients in a bowl and mix with a hand mixer for a couple of minutes.

Drop onto dehydrator sheets with the teflex and dehydrate overnight

Remove and keep in refridgerator.

Enjoy!!

Raw Mashed Potatoes & Stuffing

Just in time for the holidays!!!Day 4 of The 12 Days of Christmas Giveaways!!!

Today’s Giveaway is Simply Raw – Reversing Diabetes in 30 Days DVD

To be eligible to win, all you need to do is put in one word in the comment section for this post summing up what raw means to you. Only one word.

Raw Mashed Potatoes
1 head cauliflower, broken into florets
1/4 C cashews or macadamia nuts
1 cloves garlic, peeled and minced (or to taste)
2 tbsp olive oil, or to taste
sea salt to taste
black pepper to taste

In a food processor, grind nuts fine.
Add cauliflower, and garlic, and process fine.

Add olive oil until mixture looks like fluffy mashed potatoes.

You may want to add a little water if too thick.
Remove from food processor and sprinkle on black pepper to taste

Raw Stuffing

1 C sunflower seeds, soaked and drained
1 C celery
1  onion
1 clove garlic
1 T sage, thyme, savory or any other spice you would like to add, I find that fresh herbs are much nicer                                                1/4 cup parsley

Salt and pepper to taste

In a food processor, grind soaked sunflower seeds fine.

Grind flax seeds fine in a coffee grinder.

Remove ground seeds to a bowl.

Place all ingredients in the food processor and mince.

Adjust spices and salt and pepper to taste
Place in a pie tin, or glass cake dish of suitable size and dehydrate for several hours until dressing has reached your desired consistency.

This recipe I tried using almonds, which worked fine, but a little drier than sunflower seeds, Sunflower seeds work much better.
