Spirulina Krispie Bars

Spirulina Krispie Bars

www.jodiburke.com

When I lived on Vancouver Island – I would visit this health food store that sold these amazing Spirulina Bars – don’t know the recipe and tried to copy it (kind of hard when you don’t know the recipe at all) but this is what I came up with and different but I think still tasty.

it may seem like I am on a bit of a Spirulina kick but what I am trying to share is how easy it is to get superfoods or nutrient dense foods into your way of eating and it doesn’t have to be hard, expensive, boring or confusing – it really can be easy, tasty and your body will love you for it!!

I am all about healthy eating made easy!!

Spirulina is a natural “algae”  powder that is incredible high in protein and nutrients and easily digested by our intestinal bacteria that in turn then feed our blood and cells.  It is an excellent source of B vitamins, is a complete protein, 18 amino acids, has PEA (Phenylethylaimine) – dubbed the love chemical so it helps us to ‘feel good’, high in bioavailable iron, is loaded with lots of enzymes – which helps with digestion, antioxidants, beta-carotene, omega-3 fatty acids, and is extremely high in Chlorophyll, which helps remove toxins from the blood and boost the immune system.

Spirulina is one of the most nutritious food sources in the world – I choose Purium Spirulina because it’s organic, non-gmo and live – always make sure of these qualities.

What if consuming a tablespoon or two per day of a simple food like Spirulina could drastically lower your chances of developing cancer, heart disease, or stroke, or just feeling better overall?  Wouldn’t that be cool?

Recipe

–  2 cups Crispy Rice cereal

–  1 cup Pumpkin seeds

– 3 tbsp Chia seeds

– 3 tbsp Hemp seeds

–  1 cup Sunflower seeds

Mix together in a big bowl

www.jodiburke.com

In a pan on very low heat – just enough to warm things, mix together

– 1/4 cup Coconut Oil (Purium’s Coconut oil)

–  1 cup Almond butter

–  1/2 – 3/4 cup Agave, Honey or Brown Rice Syrup (depending on the sweetness – I used Brown Rice and it needed a little more)

–  1/4 cup Tahinni

–  1 tbsp Vanilla

– 2 tsp Spirulina (Purium’s Spirulina)

Mix all ingredients together and when smooth  mix into the other bowl and mix well.

Press into 8 x 12 square dish.

I found it best to keep in fridge – cut into squares, eat, share and enjoy!!

Great snacks, on the good food source and will keep you satisfied for quite awhile – including your sweet tooth!!

Tomato Salad with Spirulina Hemp Dressing

Tomato Salad with Spirulina Hemp Dressing

Always trying to find little ways of adding in nutrient dense foods or superfoods, since being a mom I have always done that over the years.  Knowing what I know now of course I would do things differently for my kids but we do the best we can with what we know.  I do remember my kids coming home from birthday parties asking why our juice tasted so different and that was because it was 3/4 water – I even knew then they had too much sugar even being real juice,I held out as long as possible before they figured it out!! lol

So now that my kids are teenagers and I can make something that has a fair amount of nutritional value AND they like it is pretty cool!!  I made this dressing and my daughter loved it so made it a couple of times, now I just make a bigger batch 🙂  Kes loves salad dressings even this one and it’s green!!

www.jodiburke.com

Tomato Salad

I just cut in half a bunch of baby tomatoes, an english cucumber, sliced small a green onion or two and chopped some parsley on top, but you could do basil or dill or any other herb.  I love adding fresh herbs to salads, they always add a nice flavor and are green!!

www.jodiburke.com

Spirulina Dressing

– 1/2 cup Olive oil (preferably and cold pressed is best)

– 2 cloves Garlic

– juice of 1 Lemon

– 1/4 cup Cider Vinegar or White Wine vinegar

– 2 tbsp Hemp shells (or called seeds or nuts)

– 1 tsp Himalayan Sea Salt

– a little black Pepper

– 1 tsp Spirulina (Purium Spirulina)

Throw all ingredients in a Vitamix or blender and blend until smooth.  Pour over salad and enjoy!!  Can easily double the recipe.

Raw Ice Cream

Raw Ice Cream

www.jodiburke.com

Easy, quick, tasty and only a couple of ingredients!!

And the best part is you really don’t have to measure anything – doesn’t get much easier than that!!

Oh and the fact that it is raw AND vegan – you wouldn’t think so!!

With summer coming, you can try many different flavors – it’s a cool treat or heck even for breakfast 🙂

For the recipe here I did measure just to give you an idea but I’ve made this many times and have never measured.

www.jodiburke.com

– 2 frozen Banana’s

– 22 frozen Strawberries

– 1/2 cup cashews soaked for about 10 mins

Put all ingredients in a food processor  and process until smooth – you will need to stop it and scrape the sides down often.

www.jodiburke.com

Cashews are optional – they add more of the creaminess like an ice cream, without them it’s more like sherbert and it’s the same for either recipe.

Get creative – use blueberries, mango, peaches any fruit really that can be frozen – kids love this!!

www.jodiburke.com

It tastes pretty yummy, satisfying and it’s healthy – and good to the last spoonful!!

Self Love & Food

Self Love & Food

www.jodiburke.com

Self-love is important to living and eating well. Self love influences many areas of our lives.  Please don’t get it confused with a big ego or some arrogance, self love is none of that.

Part of self love is truly knowing yourself and your values, its putting your self and needs first (not saying to not give concern to anyone else and I know that’s easier said when you have small kids), but there are many ways one can do this even though they may seem small.

Strong self love is being able to creativity express you – yourself.  I know for me when I was younger I didn’t have the confidence to truly be me, I was trying to please everyone around me and also, here’s the biggie – trying to do it right – perfect – be perfect – how exhausting!!

Self love allows nurturing of self, whether it be hot bath, a form of exercise, eating healthy, a creative outlet, honoring who you really are by your values, likes and dislikes and living by them.

Self love is not verbally or mentally beating one self up, over exercising, over eating, eating a lot of processed high fat foods, denying yourself who you are,  not having a creative outlet (that could be in the kitchen, painting, writing, gardening, dancing, dressing etc) or being in any type of abusive relationship (not just romantic, but work, friendship etc)

How do you talk to yourself? Would you talk to a good friend that way?

When you eat do you just eat? In other words are you watching tv, on the computer etc?

Do you know what you like to do or be in your life but are constantly denying yourself it or finding excuses?

Do you let fear or confusion rule?

Do you reward yourself for things well done with a high fat, over processed treat?

Do you ever feel like it’s no use or nothing will change?

How often do you over eat or eat out of boredom?

A couple of things that I found to be helpful for me for self love and letting go of emotional or binge eating was getting clear on what I didn’t want in my life and what I did want.  I bought a journal, made lists then starting asking myself some questions…

– What change would I need make to do, be, or have for me to be that person? (Who do I want to be, what     is my personal choice) ?

– How would I have to feel?

– How did I want to live?

– How do I want to feel in my body?

– What things do I enjoy doing?

– Why am I not doing them?

– What is it I truly want?

– Why is it I want that?

What is my dominate energy in my life? (ie anger, sadness, happy etc)

– What would it be like to be______?

– What kind of person have I been?

– What kind of person do I represent to the world?

– Is there a feeling I struggle with over and over again or have every day?

– What thing (even if it seems small) could I do today to start me moving in the direction I would prefer?

What I like to do in the morning several times a week is get up and sit down on my laptop or journal and just write – I got this from the book many years ago ‘ The Artist’s Way’ by Julia Cameron.  I just would write, I don’t censor, think about it or heck most times I don’t even read it.  I never worry about punctuation  – I just let er rip.  Anything and everything that comes up and I let it go.  Then I may ask myself some of those questions.  I am looking for blocks that have kept me stuck in habits or thinking that may not be supportive to myself.

It got me releasing some mental chatter, negative emotions and well some plain crap.  It made me realize what I focused on, how I was thinking and honestly admitting to myself where I was.  I did not then beat myself up, I started dreaming – which got me feeling better and believing in myself and liking myself.  Eating healthy became easier too as I wanted to nourish myself and my body more than beat it up anymore.

Everything is energy – when we have lower emotions especially towards ourselves, they have a lower vibration.  The more you can let them go, the easier it will be to start shifting over to a place of self love.

Remember this – Self love is truly self expression in the highest form
No need to explain justify hide or feel bad about it or how you want to express you
We are all different and unique and when we can each embrace that within ourselves – life can become amazing
Part of self love is our relationship to ourselves, our bodies and food – why not make it great!!

You don’t need any reason to have love or self love, you are here, alive and really just perfect the way you are – see it, feel it, believe it and know it.

You so deserve it!!!

Would love any feedback

Diets – YUCK!!

Diets – YUCK!!

Healthy Eating

Just google the word ‘diet’ and you will get a list of the best 32 diets.  Google different types of diets and you will get many more starting from the Zone diet, South beach probably a North beach one too, the GI diet, the Dash diet, the Mediterranean diet, the Flexitarian diet, the glycemic index diet and well I could go on…….

Diet according to wikipedia –

In nutritiondiet is the sum of food consumed by a person or other organism.[1] Dietary habits are the habitual decisions an individual or culture makes when choosing what foods to eat. The word diet often implies the use of specific intake of nutrition for health or weight-management reasons (with the two often being related).

I wonder how well these ‘diets’ work to have soooo many of them!! 🙂

Lets  look at the word – DIE-T  – interesting isn’t it?  It’s restrictive and not always in our best health interest.  Sure you could probably lose weight, many do, but what happens when you go back to eating the way you did that helped you put on the weight or even got you your health issues?  As we know many health conditions can be helped with proper and healthy eating.  If a diet really worked why are there so many of them?  I know we are all different and not always one thing works for everyone but I do believe in eating real food, nutrient dense food and a variety of food – for anyone.  it also sounds restrictive, can’t have and that creates issues in itself I will go into later on.

Here are a few suggestions if I can share….

Stop using the word ‘diet’ .  We shouldn’t really ever be on a ‘diet’, maybe a cleanse to detox, clear up health issues but dieting especially if you are suppose to eat all kinds of only a few foods, or just one type of food for days on end or having to measure everything or counting carbs, fats, sugars etc is a make work project that your energy could be better spent somewhere in my opinion.

What is cool about eating more whole, real foods, more live foods is the body can easily assimulate and digest it.  And many times you  won’t over eat and because the body is being fed properly you actually end up eating less.  Plus if it’s nutrient dense foods – many health benefits can surface.  The more raw foods you can add in as well is better on on’es health as well.

A way of eating should be a lifestyle not a diet in my opinion.  The more you can add in good and great nutrient dense, real, whole, live or organic (and non-gmo) foods the easier it is.  Maybe you are thinking you don’t want to give up such and such – I’m not saying that.  Sometimes it’s not what you have to or should give up but rather what can you add in or possibly do betteror how could you make a better choice and over time you may switch things out completely.

Here is an example – when I first started doing raw foods the smell of fresh baked bread – oh my – I still enjoyed it and especially when I could smell it fresh baked.  So if I was in a restaurant and they brought fresh baked bread well with lots of butter – yup but I would take a bite or two and savor it.  The interesting part is after doing this a few times I realized I didn’t really enjoy it.  Probably for two reasons – the emotional response of fresh baked bread actually took me back to earlier times when my grandfather taught me how to bake bread in his kitchen – fun times, good times – memories.  I also found the more I was cleaning up my way of eating to eat something like that felt like a brick in my stomach after eating it – there are only 2 more ingredients in bread then there are in glue (well home made anyways lol)  I still love the smell of fresh home baked bread – I don’t even consider eating it now – does not interest me.  So things can shift.

Maybe you like drinking pop (or soda for you Americans) maybe it’s diet soda – first switch back to regular pop – the body can deal with breaking down sugar but the diet stuff is all chemicals – your body doesn’t have a clue how to digest or utilize that!!  Then maybe after a bit switch to carbonated water with juice, then just juice (as we really want to cut down carbonation or not cut it out eventually) then maybe to half jucie half water and finally water – the best thing for your body – as we are over 70% water!!

Here are some suggestions to moving towards a healthier way of eating without feeling like you are restricting.

– aim for 50% fresh, natural, live and real foods at a meal

– drink more water after all we are 70% plus water – our bodies need water

– stay away from hydrogenated oils – the body doesn’t know how to digest or utilize these including margarine

– stay away from artificial sweetners again the body doesn’t know how to digest these

– stay away from low fat, fat free products – they are chemical sh*# storms really, but again the body dosn’t know how to digest these

– stay away from products that have wording on the ingredient labels that you can’t pronounce and have no clue what it is

– stay away from products that have a shelf life longer than your dogs life

– get sunshine every day (lol in Vancouver that can be very hard sometimes)

– get fresh air and exercise

– laugh more and spend your time with people who inspire and lift you up – stay away from drama and chaos

I believe that eating healthy is a good things but cutting out as much stress, drama, chaos, negativity is just as important!!

Healthy Eating

Healthy Eating

Apple

Healthy eating means different things to different people.  It has become clear to me that it’s something I do every day and I love sharing with people who are interested..  I’ve been asked several times lately if I was going to get back into doing more recipes.  I was hesitant at first as I have a hard time writing things down, like the measurements of a recipe –  it takes great discipline.  I have the ability to walk in the kitchen and get creative and make up recipes as I go or look at one and modify it to what I want or what I have on hand.  I also realized that a lot of people don’t or can’t do that, so why not share.

I also wanted to be more frank and candid about my journey through my disordered eating and how I’ve been able to heal that addiction, my past and move forward being happy and being me.  Addiction to food is big in our society now a days – I want to touch on that and help people understand the benefits of eating healthier, incorporating more real, more fresh foods, more greens and more superfoods into their way of eating.  It doesn’t have to be hard, expensive, boring and time consuming.  Besides are you worth it?  I mean if you don’t take a little extra time or care with what you put in your body today, your body down the road will let you know.

I can speak from experience, after a 7 / 8 month in the film industry working long, some very long days, eating in many restaurants (trying to still eat healthy), or catering from food trucks and yes they had healthy dishes but always on the run, I was a bit burnt out, I was actually depleted.  I needed to be putting extra things into my body and when I’m out the door between 6 and 6:30 am and back anywhere from 7 – 8 pm at night some things slid.  It does catch up with you.

Strawberries-waterI’ve had some down time these past few weeks and wondering in what direction did I really want to take my life, how did I want to live and spend my time.  Nothing was really feeling right.  Then it all clicked and I knew deep in my soul what I wanted and needed to be doing – so I hope that you will stop by again and check out what’s coming up as my goal is to share healthy eating ideas, green, superfoods, raw & vegan recipes, inspiration from breaking free from emotional eating & some Photographs along the way!

Would love any feedback. Please feel free to share this!

Is there any idea or thing you may be struggling with, please don’t hesitate to get in touch.  I’ve been doing healthy eating coaching for years. I love to help people make peace with healthy, real foods.

Mother’s Day

Mother’s Day

It’s kind of interesting how we take one day and honor our mother’s and one day to honor our father’s.  I think we should do it more often and you don’t realize that until you lost a parent.  I often take a few minutes and remember my mom and the good times we had.  I had a great Mother’s day yesterday with my two beautiful teenagers – time flys.  My son just got back a few months in Europe so it made it even more special.

I also got the chance last week to photograph a dear friend as she is in her 8th month of pregnancy and I think she is just beautiful – there really is such beauty in a pregnant lady and they usually glow as Jane does here and comfort is the name of the game.  You amaze me Jane, the calmness, beauty and serenity that embodies you (she has two more at home) – maybe this one will be a girl!! 🙂

I’ll leave you with a few giggles on Mother’s.

Hope you got to share the day with your Mother or if you are a Mother, you had an awesome day too!!

Challenge Yourself

Challenge Yourself

I had the privilidge of photographing a new friend last week that has really inspired me and I just wanted to share why.

I met him through a friend at his daughters new restaurant in Steveston outside of Vancouver – The Living Cafe – which I highly recommend stopping in if you are out that way – the food was amazing, and had choices of raw, live, whole and gluten free – what a great combination!!

Back on track here, well I met her father Kevin and we got talking and we ended up setting up a meeting to take some pictures for his new website and upcoming competition, which at the time I didn’t realize it was for a competition I thought it was for just his web site.

untitled (97 of 222)In the process of realizing that he told me his story of turning 40 realizing where he was at his age and health and found a book that got his inspired and committed to the 90 day program.  he had before and after pictures which blew me away.  Not that he was big and fat before, maybe could lose a few pounds but his after pictures in just 90 days were truly amazing.

He ate clean and committed to working out every day.

Since then he eats healthy, works out and feeds his mind with great things.

He also found this cool Gymstick thing that he is using, now promoting and creating videos for people like me showing me how to use it and what I can do with it and not have to go to the gym – how cool is that??

untitled (196 of 222)

Now he is entering his first competition and he is 50 something – that got me motivated.

As I hear so many excuses from people ALL the time – I’m too old, it’s that age thing, I’m not as young as I used to be blah blah blah

untitled (181 of 222)People like Kevin get inspired, make a decision, take action AND commit to it – therefore they get results.

I had to look at some areas of my life and ask some questions of where I wasn’t showing up and being the me I could truly be.  What excuses were I using and where was I hiding??

Are you doing the same thing?

This isn’t about beating anyone up it’s about Challenging you to stop playing small and be YOU.

I start a 10 day Transformation Cleanse next Monday – the day after Mother’s Day 🙂 – I will keep track of my progress and share – I’m stepping up and out.

Thank you Kevin

Step out of your comfort zone today and do something your future self will thank you for!!

Have an amazing day!!

Being Present

Being Present

Sunshine-Coast-Easter-057_t

Being Present – what does that truly mean?

Have you ever tried meditating?

Isn’t as easy as it sounds is it?

For most of us  we spend too much time in our heads , or I can really only speak for myself – I have spent way too much time in my head!!

I who struggled with an eating disorder, also struggled to be in my body most of the time, it was easier and less painful to be in my head – and therefore I got to be a little on the analytical side – not saying there is anything wrong with that, but for me it wasn’t always the best thing.

Not wanting to be in the body for whatever reason, which is somehow connected to some sort of pain in most cases, is a way of numbing ourselves, not feeling, which easily leads to over eating or binge eating.  It also leads to multi tasking and rushing through things or life.

Being fully present is not always an easy thing to do – just try meditating.

But the more we can slow down, connects to the inner core, the more present we can be in the moment – not reliving the past (especially memories that elicits anger, guilt, pain, frustration etc) or worrying about the future but truly being full y present in the moment is about being fully connected and alive.

The past is over – let it go, forgive yourself (or anyone else) and let go of any negative emotions.

The future is not here yet, don’t waste the current moment worrying about something that hasn’t come yet.  That’s not to say don’t plan things but I think you know the difference.

For me I am finding breath work has really helped me.  It quiets the mind, relaxes the body, gets me in my body and any emotions that come up I can breath through and release them with ease allowing for more calmness in my life.

Also Long Exposure Photography – it helps with my patience, staying focused and very present.

Whatever helps you spend more time being present – you might be amazed at how doing something so small yet significant can impact your life, besides YOU deserve to have, feel and live a phenomenal life – don’t you think? 🙂

Would love to hear your thoughts and as always please feel free to share.

Be present and make it a great day!!
