Marinated Veggie Unpasta

It’s unpasta as you know we can use vegetables even for that!!

Marinade

1/4 cup Expeller Pressed Toasted Sesame Oil (probably not raw but nice flavor)

juice 1/2 lemon

minced garlic 1 -2 cloves

some chopped parsley or cilantro (optional)

pinch sea salt

Chop up a mixture of veggies, I used

1 red pepper

approx 1 cup spinach

1 – 2 tomatoes (depending on size)

a portabello mushroom

Toss all together and add marinade

Depending on the amount of people eating, adjust the amounts of veggies and marinade.

Let sit for 2 – 3 hours.

Using a Spiroli, make pasta noodles out of zucchini.

Put the marinades veggies on zucchin and garnish if you desire with chopped green onions.

Enjoy!!
