Raw Pumpkin Seed Crackers with Black Olives

 

One of my favourite things to do is to try different raw foods that I can buy in a store or restaurant and go hoe and figure out if I can make something similar that I truly enjoy, especially when I travel down to the USA as there are so many choices down there over here in Canada for raw foods.  I did a couple of versions of this cracker (another post coming soon) and I loved them all!!  Yes a dehydrator is needed and soaking time for the seeds but oh so worth it!! I make a good size batch so I don’t have to do it often – yet they are yummy and go fast!!

  • 2 cups Sunflower Seeds
  • 1 cup Pumpkin Seeds
  • 1 cup ground Flax seeds
  • ½ package Spinach (I usually get my organic spinach in the plastic containers) or you can use Kale
  • 4 – 6 tbsp Nutritional Yeast
  • 1 Onion finely chopped
  • 3 Jalapenos (optional)
  • 3 cloves Garlic
  • 4 Madjool Dates

 

I like to put the Sunflower Seeds i the processor first and give them more time to process then the rest of the ingredients. Process them for a little bit first – until small chucks or almost fine.

Throw the rest of the ingredients into a processor and process until chunky yet not big chunks.

Put mixture into a bowl and stir in approx. 2 cups water and mix well. Let sit over night even 24 hours is better if possible (starts a bit of the fermentation process at that point ).

Stir well to see how dry it is as after sitting it may need a little more water, you want the mixture to stay together well, not be too dry and definitely not runny.

Spread out on flex sheets in the dehydrator (I like this crackers a little thicker than regular crackers so not too thin) and score with a knife into squares – the size you choose.

Dehydrate approx. 12 hours, flip sheets and continue to dehydrate approx. another 6 – 12 hours depending on the thickness – since I like these crackers on the thick side so it does take a little longer.  These are so good with many different raw spreads, hummus or even just coconut oil.

Keep in an air tight container and they will last for several weeks.

Raw Hummus

After the last post I said I would have some good recipes for you for the pulp of Almond mylk, which I do, but I’m in Vancouver for a few days and I forgot the recipes in my book, I should just put them on the computer!!!

This hummus though I have been making and really enjoying lately, the sunflower seeds work better.  Again another quick and easy recipe for getting more raw foods into you diet.  Which with spring here, it will only get easier to put more raw in and enjoy the benefits.  The flowers are coming up here in the city and it’s kind of warm which is nice, I over dressed coming from the Coast!!!

This dip is good with crackers or veggies, over the next couple of days I will be adding the recipes from the pulp…..a spread, croutons and Sloppy Jo’s so make sure to check back.  If you’re liking the recipes, I would so greatly appreciate you sharing this with your friends or leave a comment or hit like!!

Hummus

-1/2 cup sunflower seeds soaked at least an hour

-1 medium zucchini peeled and cut up into chunks

-1-2 garlic cloves (depends on how much you like garlic)

-1 tbsp tahini

-juice of one fresh lemon

-pinch celtic sea salt

cold pressed olive oil (optional or you can use another oil like flax or hemp to get extra oils in)

Throw all ingredients in a Vitamix, blender or processor and blend until smooth, now you may need a little water for consistency or if it’s too thick.

Serve with your favorite crackers or veggies and enjoy!!!

Stress and Food

Do you ever think that the two are related??

Didn’t someone say once ‘let food be thy medicine’???

After reading this article in the Globe and Mail, Our Busy Life is Making You Sick, I really linked a few things together in my life.  I say that, as I have been going through a major transition in my life and the stress levels are high, actually have been for about 2 years now.  No wonder I have been feeling tired so much!!!

Stress……..fight or flight…….real or not, doesn’t matter.

I also have been looking at patterns in my life, especially around food.  When I am stressed how do I react?  Well sometimes by drinking some wine, oh that relaxing state, can I get it another way?? Yes!! Food…..well I realize that for me, food has played a big role in how I handle stress, I either sustain from food or use it as a comfort, don’t want to feel so I eat or don’t.  You know, that knot or anxious feeling in the stomach???  Stress!!

Restrictive or over indulgence…….not a good picture of health.  This time, realizing that stress plays a major role in the health of your body, I am approaching it quite differently  and it feels oh so much better.

I am eating regularly, making sure I get lots of nutrition from my food.  Eating alot of variety, through out the day, and even when I’m not hungry so to speak as I know I need the nutrition, my body is tired. Stress can be related to so many diseases.

I am juicing, adding super foods, getting out in the sunshine whenever the sun is shining, taking time to connect with nature, some deep breathing, meditating and getting back to doing yoga.  It all helps.  How you are living each day, each moment, eating and thinking, without judgement are huge!!

I can feel the difference.  It doesn’t happen over night, but each day brings more vitality, clarity and a feeling of over all more health.

The more I give my body proper food, therefore proper nutrition, the better it is feeling.  The better it is thinking.  The better it is preforming.

The more I decide to have a healthy relationship with food, the better I feel.  Food should be your medicine, your friend……..not something you abuse or fear.  It should be real.

Have a look at your life, your way of eating and your relationship with your food and yourself.  Are you eating or not eating to feel or not feel certain emotions or are you eating to be and feel healthy?

Give it some thought and remember you deserve only the best……..are you giving yourself that???
