Real Raw Chocolate…….Yum!!!

All chocolate is made from the cacao bean (or cocoa bean).

Cacao is chocolate.

Since I have been on a bit of a raw cheesecake exploratory lately, and my family and friends are loving it!!!  I have been using cacao is some form or another in them and they have been tasty, but it is also good to know that real raw cacao has many health benefits as well.

So, here is some info on cacao.  It is the seed or nut of the fruit from the tree it grows on.  They are always in season and like to grow in  temperatures above 60 degrees F with little fluctuations of high humidity.

Way back when, the Cacao beans were used instead of Gold for money by the Mayans and Aztecs.

1879 was when the first milk chocolate bar was produced.

But, that is probably the start of when things changed. Cacao has a high mineral content but it is destroyed when cooked, heated, refined and processed.

Cacao contains the highest concentration of antioxidants of any food in the world, more than (by weight) red wine, (shucks), blue berries, acai, pomegrantes and goji berries combined.

Cacao is the #1 source of magnesium, which is the most deficient major mineral on the SAD (Standard American Diet).

Cacao also contains iron, chromium, manganese, zinc, copper, Vitamin C, Omega 6, Phenylethylamine (PEA), which is not present in processed or cooked, that is the chemicals we produce in our bodies when we fall in love!! Also, anandamide, tryptophan, serotonin, fiber just to name a few.

Most of this is lost when we process, heat and cook cacao.

Because of the nutritional density, it is considered a Superfood by some.

From cacao beans you can get cacao nibs, powder, butter and paste that can go into bars, cheesecakes, beverages, trail mixes, drinks and smoothies.

So, if it’s raw cacao…… is good for you, but like anything, remember in moderation.  You will find the taste slightly bitter at first if you eat a nib on it’s own, but after awhile, if you try one of your old favorite chocolate bars……..taste like junk, fake, yuck!

That last  cheesecake I made was a banana chocolate one and boy was it good!!!

“Let food be your medicine and medicine be your food”.  Greek physician Hippocrates (460-377 BC), the founding father of natural medicine.

If we are in a time when obesity, heart disease, diabetes, high cholesterol and so on are at an all time high and we are beginning to understand or believe that it’s what we eat, then isn’t it time to really look at what we eat??

If what we eat gets us to one of those points, would it not make sense to start with what we eat as well?  But what does that mean to someone who’s life time has been consuming man made, processed, packaged ‘food’?

It doesn’t happen over night and I truly believe in flow and ease but with continual improvement and using the KISS method for starting out.

Which means asking yourself or being honest with yourself about where you are now and where do you want to be or feel?

What changes can you make or are willing to make?

Do you need a buddy or a coach or a program to help you get started or stay on track?

Can you start by cutting back on something or things or making shifts with some?

For instance, how much coffee are you consuming in a day? If it is more than 2 cups, can you reduce that down or go for decaf?

Is there cream and sugar in the coffee? If so, could you start cutting that out?

Instead of missing breakfast or grabbing whatever when you run out the door or at the drive thru, could you take an extra 5 minutes and make a green smoothie to sip on through the morning.

Instead of going out for lunch or the food court and getting usually fast food, could you bring your own lunch?  Now that is a huge win win as you will eat and feel better, do more for the environment (no take out containers) and save yourself money!!!

Could you start adding a salad to your evenings dinner? Or more veggies?  Or put out a veggie tray to snack on while preparing dinner?

Can you give up the snacks at night in front of the tv?  Can you let go of some of the tv watching?

If you were to start something today and build on it, think where you could be in a years time!!

Don’t have time to do this is what I hear often, and my response always is, when it comes to your health and well being, if you don’t make the time who will??

Food is to nourish our bodies.

Macadamia Beet Dip

Macadamia Beet Dip

Easy, Healthy and Good!!

1-2 Beets chopped up (big chunks)

1/4 cup macadamia nuts

juice of 1 lemon

1 garlic clove

celtic sea salt to taste

Put everything in the blender or Vitamix and blend up till smooth.

Adjust to taste (maybe a little pinch more of salt or garlic).

Great for dipping endive leaves into, or flax cracker or carrots or whatever you choose!!



Diet vs Lifestyle

To me, lifestyle means a way of life, a way of living.

Diet, well, lets look at the first 3 letters DIE, need I say more??

I wonder why there are so many ‘diets’ out there? I wonder why each year new ones pop up, The South Beach Diet, The Atkins Diet, The 3 Apple a Day Diet, The 3 Hour Diet, The Beverly Hills Diet, The Cheater’s Diet, and I could go on. There is a list of about a gazillion names, well ok, maybe not that many but more than a few hundred and I’m not making the list up either!!

Eating healthy, for me, is about choices, choices I can make every day. It’s not about restriction, it’s about eating for optimal nutrition, it’s about feeling good, it’s about what works for me, it’s about listening to my body – what it wants and yes sometimes even just for fun.
Too often we are busy running around, grabbing anything on the go, we don’t even know if we really are hungry let alone what for. Lots of times, that is when the weight piles on. So, we then put ourselves on a ‘diet’.

Eating well or healthy should be a lifestyle, not I have to go on a ‘diet’ or Monday to Thursday. I starve myself those days and eat these things that I don’t even like so I can eat whatever and lots of it all weekend long. By Monday it’s like having a hangover sometimes and then only to have to go through it again next week.

Can you imagine if that pressure was taken off of you, how it would feel? Take a big, deep breath in right now and let go. Let go of the restrictions, the guilt, the pressure, the stress of the world of ‘dieting’. Take another deep breath in and let go and just sit for a minute, just a minute.

Doesn’t that feel better??

We already have enough on our plates (no pun intended!!) to have more pressure on ourselves. It shouldn’t be stressful or hard and certainly not any fun!

I leave you with 2 questions to ask yourself……….

Would you rather have a lifestyle way of eating (compared to a diet)?


If you fed your spirit, your soul, would you have a better relationship with food?

I know for me, it has made a huge difference in my life……..I threw away my scales a long time ago for starters!!!

Healthy and Raw……

What does that mean to you?

Do you think of eating just carrots sticks and salads all the time?

Giving up everything you like to eat?

Being hungry a lot?

Some people even ask  ‘meat too’?

I wanted to share with you what I think that healthy and raw mean to me and why I choose those words.

Healthy – to feel good, no great, to look good, have that sparkle in the eye, to have a presence that is confident, calming, energetic, grateful, peaceful, inviting, inspiring, motivating and happy.

Raw – for me that is real food, simple, easy, alive, BUT also me…..(ok maybe not simple) but alive, real and authentic.

Yes this is about eating raw foods, because I believe that what we put into our bodies, our food choices, does affect our thoughts, our emotions, our moods.  So, when we clean up our diet ( and what works best for you may be different than me) and make that more of a lifestyle, we can become clearer.  We feed our bodies, and clean our bodies.  With a clean body we have a cleaner mind and we can become more real, more raw, more authentic.

To me being raw means being real.  I had to go through a lot of dark nights to learn that.  My food choices over the years has played a huge role for me.

When one decides to bring in more real, live,  raw foods into their life, they have more time…….really.

How much time do you read labels looking for carbs, fats, calories, proteins etc?  How much time do you waste weighing yourself and fretting over the numbers on the scales?  Looking through magazines for the latest ‘diet’ or pill or whatever else is new?  How often are you tired and just don’t have the energy?

I could go on.

Is that the real you?

Marinated Veggies Unpasta

Marinated Veggie Unpasta

It’s unpasta as you know we can use vegetables even for that!!


1/4 cup Expeller Pressed Toasted Sesame Oil (probably not raw but nice flavor)

juice 1/2 lemon

minced garlic 1 -2 cloves

some chopped parsley or cilantro (optional)

pinch sea salt

Chop up a mixture of veggies, I used

1 red pepper

approx 1 cup spinach

1 – 2 tomatoes (depending on size)

a portabello mushroom

Toss all together and add marinade

Depending on the amount of people eating, adjust the amounts of veggies and marinade.

Let sit for 2 – 3 hours.

Using a Spiroli, make pasta noodles out of zucchini.

Put the marinades veggies on zucchin and garnish if you desire with chopped green onions.



I got up this morning in a funk, ever have one of those days??

So I headed down to the beach with my dog Spirit and sat and reflected on some things going on in my life.  Now, I don’t know if any of you believe in the spirit world or what happens after a loved one physically leaves this world, but my mom has a way of letting me know she is there for me.  She passed away a couple of years ago, at a young age to cancer.  She usually leaves good signs that she is there, like this am, when I found a piece of beach in the sun, several minutes later I looked up to a tree that sometimes has an Eagle in it, and this morning it had four.  I have never seen that before.  Maybe it wasn’t her giving me a sign, but then again maybe it was!!

One of the things I was reflecting on was my blog, as you noticed I just changed the title over, as I have this thing with food and eating healthy, always have.  Now, I really try not to be too anal, but my husband might dispute that one!!!

One of the things I have realized is that I have always had a thing with food, even when I was younger.  It wasn’t always good or healthy.  As a teenager, you go through a stage of eating lots of junk food, well, most of us anyways, I did, but then I took it beyond that.  I went through a stage of not eating, anything, otherwise known as starving myself or anorexia.  It was short lived, only about a year or so, I believe that my lowest weight was about 87 lbs, now I’m only 5ft 2, but that was still way too low.  My mom knew the signs as she had struggled with that as well, makes me wonder now if that was subconscious learned behavior??

From there, through the help of some close friends, I learned that I could eat, anything and all that I wanted without getting fat!!  I was in, little did I know at the time what path in would take me down and how it could affect my health, but I didn’t care as long as the weight didn’t come on.  You’re probably wondering the name of this diet aren’t you?? It’s called Bulimia and this is the first time I have gone totally open about it.  People know, I don’t hide it, but I’ve never put it out there and I think I should.

I share that info as I know that food, emotional eating, guilt, diet, advertising and so on are so much a part of this cultural these days.  Women are multi tasking more than ever betweens children, jobs, or being self employed, wanting to feel and look good or healthy, having the time and energy for it all.  Sometimes we meet our feelings of overwhelment, exhaustion, emptiness, feeling unappreciated or over extended or putting our needs last by filling our selves up w ith food.

The food we usually choose in those situations is comfort foods or snack foods that we just keep snacking on.  Now, I share this with no judgement as I went down that path for many, many years.  I struggled with Bulimia throughout my late teens and well into my twenties.  It was not fun alot of the time.  It mostly affected me between January and May, hmmm, do you think I could have had SAD at the same time!!??

I sometimes cycled between starving myself and binging, the mind is a powerful thing.  I share this part of me, as I wanted to be real with any of my readers, letting you know that I wasn’t always a health nut, well I was in between, but I was a fake, insecure, sneaking food junkie I guess you could say.  In between I worked out, taught Aerobics (ok yes I am dating myself there), ate fairly healthy when I was eating but oh sooooo confused and insecure inside.

I was part of several studies on women with eating disorders, so I did try and get outside help a few times as I got older as I recognized the insanity of it all.  What I have learned through it all, the most important thing, that I do matter. I am important and so are my feelings, even if it’s just to me.  That is why I choose to be nice to myself now (that and my friends still telling me I am way too hard on myself, hmmm more sub conscious programming, but I have been working on it!!!)  I am learning to trust my gut feelings on things and not question it, it’s being in the flow and being true to me.  That is what has lead me down the road of eating more raw and healthy, plus I need to make up for lost time of those years of abusing my body.  I feel the difference when I eat raw, or just way healthier and when I don’t, my body tells me that also.  I like to drink a glass or two of wine sometimes, and my body is letting me know that it just doesn’t want it anymore.  Alot of food too, which sometimes can be frustrating as it’s not that unhealthy yet it’s what my body doesn’t want right now, so I am listening.

I share this with you as I want to be honest.  I love food, I get inspired by it, I love making healthy things and when I watch Youtube videos read books of people eating healthy and feeling great, and curing diseases I get excited. As silly as that may sound and I can say I am proud now, that I traded in my Shape magazine and an unhealthy way of viewing my body and eating for one that is way healthier.  Yes, I have finally accepted that I am 5’2″ , small boned, bigger thighs and boobless!!!  I just want to feel good and enjoy the day.

So, to anyone out there that is struggling with having a good relationship with food in general, I just want to say there is hope and it can be accomplished.  EFT (Emotional Freedom Technique) or Tapping is an amazing tool, easy to use and just love and accept yourself where you are and as you are…….you deserve it!!!

And remember, it’s a journey, today does count!!!
