I normally don’t advertise like that but with all what is going on in North America with our food and eating healthy has become a make work project that should be easy and it’s not!

Why Purium?

Once you meet David Sandoval or read his book and therefore get a sense of his vast knowledge and training (only with the best that truly knew and understood the body and real health from the past) and his dedication to never using cheap fillers or by-products, working first hand with farmers so developing a real relationship and giving people a choice so we don’t have to stand or fight against the big corporations who truly don’t give a rats ass about your health it’s about profits – therefore we vote by how we spend our dollars – we either keep supporting things that literally are slowly killing us or spend our dollars that improves our health with companies that truly do care and make a difference – we always have choice.

Anyone that knows me knows that with a good movie I love a bowl  – and I mean a BIG bowl of Popcorn!!

I am a popcorn pig – there I said it!! 🙂

Now a days the one thing that is really important is to make sure the popcorn is Non-Gmo!!

Now Raw Popcorn really isn’t the same as just Popcorn but it is good and if you are wanting to have more raw foods or love Cauliflower then you will love it – yes Cauliflower!!

This recipe is simple, easy, fast and tasty – no measuring required!!

1 head (or any amount) of Cauliflower cut up into any size you would like

You can add in some Coconut oil if you like but not necessary – if you do slightly warm it so that it is melted and the rest will stick better

Nutritional Yeast

Himalayan Salt

Spirulina (again optional)

any other tasty things you like on your popcorn

The easiest way I find of mixing it all together is to put it in a big freezer bag and shake it up together – or you can just put all the ingredients in a bowl and mix them that way – whatever works best for you.

That’s it – seriously!!

It’s been quite awhile since I have done a recipe so thought it might be fun to create something simple, yet fresh, raw and oh so tasty – Jicama & Beet Salad.

Since being down in Mexico I have been eating so well.  For me, I know the warmth, sunlight and fresh foods nurture my soul.  There is an abundance of fresh foods down here besides just Tacos and Quesadillas!! lol

Fresh Foods

There are also many markets that happen happen several times a week in different locations where an abundance of not only fresh / raw foods, but tasty (from vendors) and organic.  Usually more so where the gringos are yet so much great food.

I’ve been living off much Papaya, Pineapple, Figs, Avocados, Fresh Greens and yes I admit it fresh salsa and chips – locally made and non-gmo.

I truly feel for many people that the environment makes a huge difference.  I know for myself while living in Vancouver and it was damp and raining a lot it was harder for me to eat as much raw foods as I do now – my body wanted and needed some cooked foods like Quinoa and roasted veggies.  Here I never think of that.  In sharing that – when you eat clean, your body will let you know what it truly wants – honour that.  There are too many people out there dictating that it has to be a certain way.  Yes eat healthy but listen to YOUR body!!

Energy is everything – if you are hating what you are eating and eating because you think you should or have been told to – you are actually doing more damage!!

The one thing that makes me kind of sad down here is the NA influence like Coca Cola is everywhere, and some other nasty treats yet isn’t it everywhere now unfortunately??  Corporate greed is all I can say on that one as it is not food – only chemical concoctions labelled as food and creates havoc in the body!!

Jicama, Beets & Greens – Colorful Mexico

I love Jicama and Beets especially together.

This is a Raw and Vegan recipe.

The selection of organic greens at the market is incredible – the one table sells about 8 different kinds and you get to mix and match and filler bag.

I chopped them all up to mouth size and grated up the Jicama (which isn’t as sturdy as Beets to do so) and also Beets.

I also did a second dish of just Jicama and Beets chopped up together. I also finely chopped up Tumeric thinking the color would be cool (orange with the white and red but as we know beets take over!)

Jicama, Beets, Tumeric with Basil & Dill Dressing

I have been on a Basil kick lately as I have been getting it fresh from the market and it is sooo tasty with garlic of course.

So it’s like a Pesto but no nuts – lots of Basil, Garlic, cold pressed Olive Oil, pinch of Himalayan Sea Salt, I also added in a mixture of Sea Veggies (dried that I brought from Canada) and Irish Moss – good for collagen (trying to add it in more in my way of eating) but those two are optional.

Of course since being here once I put it on the salad or just the Jicama & Beet salad I also squeeze fresh Lime juice!

In the Jicama and Beet Salad I added in a bunch of Dill too.  I let that one sit in the fridge for a couple of hours (ok while I went to the beach :)) to let the flavours marinate.  Now you can use any herbs and I always find that fresh is smooch tastier and better.

It was a tasty delight.

The salad feel free to sprinkle on some toasted Sunflower seeds or Pecans or even add in Avocado and a sprinkle of Nutritional Yeast.

Jicama doesn’t get used often enough and is very mild tasting so really takes on flavours of there ingredients.  Jicama is abundant down her in Mexico and has many vital nutrients and lots of fibre and probiotic role in the intestines.

I am so loving being in Mexico!!

Great raw – vegan snack for lemon and coconut lovers!! Easy to make, but a dehydrator is needed to maintain being raw.  I have fallen in love with Macaroons lately and have been playing with recipes that I love!!  I hope you will too!!

 Raw Lemon Macaroons

 

–  4 cups flaked Coconut

–  2 tbsp Coconut oil (Purium has an amazing hand poured organic Coconut oil)

– put in processor and process until creamy

Add in

–  1/2 cup Agave

–  1 tsp Vanilla

–  juice of 1 Lemon – I even added a little bit of the pulp (optional)

–  1/4 tsp Himalayan Sea Salt

Stir in

–  2 cups shredded Coconut

Mix well.

Take by the spoonful and place on dehydrator sheets (you can also make balls and flatten out a little – whatever works best for you)

Dehydrate for 12 – 24 hrs

Enjoy and enjoy!!!

Raw Vegan style for this recipe!!

Whats kind of cool about eating more raw foods, natural foods, (yes even superfoods) is once you learn a few ‘new’ things, food preparation and clean up is a lot less – I do not miss washing dishes that have baked on stuff – those days for me are done!! 🙂

Having the base of raw Cashews can set the stage for any creamy style sauce – the rest is only limited by your imagination!!  For this recipe I us.ed Coconut water, cilantro and fresh limes – but you could really use anything

I just finished watching most of The Truth About Cancer series – the last episode last night was with people that overcame their cancer and how they did it – each one did something different but the main theme was they changed the way they ate big time.

I have been asking people lately about our programming, asking why, asking what is normal and so on.  We seem to think it’s ok and cool to have National Twinkie Day and yet what’s normal about that?  What is the health benefit about a twinkie – I mean it has a shelf life longer than my dogs life, no nutritional value, chemicals, preservatives, hydrogenation, words I can’t pronounce or don’t know what they are yet it’s ok to promote that as a food?

I am starting to ask better questions and in my asking them hope that people start waking up and start  asking questions too, or better yet make different choices  – healthy eating shouldn’t be hard, confusing or difficult.  I believe we just need to undo some programming around food that we have gotten for many years now!!

Coconut Lime Dressing

–  1 cup raw Cashews

–  juice of 4 limes with the zest of one lime

–  1 clove Garlic

–  1 tsp Himalayan Sea Salt

–  1/2 cup Coconut Water (fresh or canned)

Put all ingredients in a Vitamix or Blender and process until smooth, depending on how thick you like the sauce will determine if you add a little more Coconut water (or even plain water)

I used a Spiralizer for the Zucchini noodles – click here to see that.  I also usually use approximately 1 small to medium size Zucchini per person (also depending on if it’s a main dish or a side dish)

Once you have the noodles, put into a bigger bowl and add in the sauce and mix well.  When being served, add in raw Black Sesame seeds, chopped Green Onions and chopped Cilantro – I love Cilantro so I add a lot – use how much you like!!

Can eat with a fork or chopped sticks!!

My recent love has been for raw Macaroons – any flavour!!  This recipe is quick, raw,(therefore vegan and gluten free) tasty and doesn’t need to be dehydrated.

Can be a great little snack or a desert!

Keep in an air tight container in the fridge and oh my great to snack on.

Macaroons

– 3 Banana’s well mashed in a mixing bowl

–  1/2 cup Coconut oil

–  1/2 cup Agave

–  11/2 tsp Vanila

–  3 tbsp Activated Barley (slow burning carb – Purium’s Activated Barley – if you don’t want to use it or have it just use Cocoa

       Powder instead)

–  3 tbsp raw Cocoa Powder

–  2 cups shredded Coconut flakes

–  pinch Himalayan Sea Salt

Add in Coconut oil, Agave and Vanilla into mashed Banana and mix well.  Add in the rest of ingredients and mix well together.

Once mixed well, spoon out (I used a melon ball scooper) onto wax paper in a container.  Keep in fridge.

Enjoy!

On the sidewalks outside the Expo

As you may (or may not) know I have been travelling for the past 6 weeks. In that traveling time we found out about the Anaheim Natural Food Expo and what an adventure!! Glad we stayed the extra days – 3 full days – and we only saw a little more than half – it was a tad overwhelming but we also met a ton of very cool people, made some new friends and got to sample many new products!

I woke up feeling not great on Monday morning, – which got me to really thinking. Yes there was a ton of samples to sample – Organic Chocolate – mostly Cane Sugar, many different Bars, Cookies, Chips, Nacho Chips, Brownies, and I could go on – sweeten, unsweeten, natural,organic, non-gmo and some even raw, lots of different health drinks and Kombucha, Coconut Water and different types of nut mylks.

The one thing that so much of it had in common, no matter what label was on it as far as being Organic, Natural, Non-Gmo was that it was dead or processed. No, not the raw samples – and there was some of that and what was there was very good!

I was a little choosey I will admit and didn’t sample just anything but did let my taste buds take over somewhat especially with the chocolate I will be honest – but how I felt on Monday was a big sign of ‘oh man this is not worth it!!’ I woke up feeling tired, achey, foggy, a tad grumpy and really out of sorts – I don’t know if it was the sugar I am not sued too, too much processed yet natural foods I am not used to or anything else – I do know that it wasn’t fun!

I got to thinking and wondering – how many people wake up like this each day, better yet, how many people wake up like this each day and think it’s normal!!??

Here is my question for you……..Just because it’s labeled ‘natural, ‘organic’ or ‘gluten free’ (which by the way is the latest trend) is it really healthy for you?

Yes and NO

Yes – for the reason being that many times the ingredients are of better quality, may also be ingredients that are non-gmo, and may not have asm much additives, fillers etc

No – as labeling can be somewhat misleading. One ingredient could be ‘natural’ and the rest all garbage, as an example. I suggest to still read the labels, don’t assume.

Another reason is – packaged food for the most part is dead foods (unless of course it is live or raw) and dead food is just that. Our bodies truly need more live foods and raw foods. Not everyone can be, myself included 100% raw, it may work fine for some people. Depending on where one lives – like I do in Vancouver where it rains most of the winter – it’s damp – I like some soups, Quinoa, Lentils etc sometimes in winter, but I still incorporate many live foods, lots of whole foods and of course superfoods.

That I believe makes a huge difference. I have been tested a couple of times like this and it ends up the same way. For me this time, I stepped back and really thought hard about how to move forward with my blog in the best way to share what I do and love for many people and it is to create more healthy yet tasty and easy recipes and many that are nutrient dense.

It was great to see so many vendors, to see that people ware wanting better,healthier choices, and people are waking up and people know that many illnesses are because of the things we are eating, it’s time to make changes – because if we keep doing what we’ve been doing, we will keep getting what we’ve got and so far people are getting bigger and sicker every year – it is not getting better!!

We also met a lady named Sarah and her husband David, in Bend Oregon that has a beautiful raw, vegan cafe and was expanding it while there since her business is growing!!! Shortbread

This recipe almost tastes like shortbread but it’s totally raw!  When you can create treats like this at Christmas time – you won’t miss the traditional cookies and snacks that are loaded with sugar!!!  I love shortbread cookies but really try not to eat them – now I can and so can You!!!

–  2 cups Almond Flour – throw the almonds in to the Vitamix in the flour container and blend until a fine powder – I did leave the skins on – you can remove them if you choose.

– 1/4 cup Coconut Oil

–  1 tbsp raw Honey

–  1 tsp Maca (Superfood – optional)

Blend all ingredients together.  It will almost look like thicker Almond butter

Place on wax paper and roll into a log like shape, wrap in the wax paper and store in fridge for 12 – 24 hours.

Take out and slice wedges – serve immediately otherwise they will soften for sure!!.

Salad with Beans & Tamari Walnuts

As the weather gets colder here in Vancouver – and it’s cold right now – eating a plain salad for me isn’t always what I am wanting.

To put some yummy yet healthy things in to the salad to switch it up some what is easy and staying with healthy eating.

Even though salad is raw, adding in Black Beans is still vegan and so is the Tamari Walnuts – unless you heat it at a very low level (stove top)

or even dehydrate them.

Explore some possibilities of different add ons – like Lentils, Chic Peas, Beans, Raw / Vegan Cheeses etc with salads – keeping it vegan, healthy and tasty!!

I am not including measurements with this post as you can create or add in how much you like, whether you are making this just for you – for one meal, and / or lunch the next day or two, or a side dish for the family or a get together with a few friends.

 

Tamari Walnuts

Put in some Tamari (preferably wheat free) in a frying pan (or bowl if you plan on dehydrating them) – I use approx 3 tbsp for a handful of nuts.  Stir well and place on heat.  I keep mine on a low heat and stir several times while on the heat for a several minutes or until the Tamari starts to slightly bubble.  I then turn off the heat, stir the nuts and let them cool down before I use them (optional)

 

Combine in a big bowl

–  Leaf lettuce

–  Arugula

–  chopped Cilantro

–  thinly sliced Red Onion

–  cut up Avocado

–  1 can (or freshly cooked) Black Beans – well drained

Before adding in Avocado (as it can get mushy) mix all ingredients together. Add in cut up Avocado.

Serve, eat plain or add a nice Salad dressing  – oil and vinegar I find is great with this – always a good quality, cold pressed oil.  White wine Vinegar is a good mix too!

One of the great things with summer is all the fresh foods and the wonderful friends that share with you!!  I had a dear friend share a bunch of plums with me this past week and after eating some I had to create something different – I was pleasantly surprised and got good feedback from the friends that tried it.

Another easy and tasty dish that makes eating healthy easy.  totally vegan almost raw, if you decide to leave out the black beans then it is raw!!

Plum Salsa

–  12 – 16 smaller Plums

–  4 small Cucumbers

–  1 cup finely chopped Cilantro

–  juice of 1 Lime

–  ½ Jalapeno pepper finely chopped

–  ½ finely chopped purple Onion

–  1 Red Pepper finely chopped

–  ¾ tsp Himalayan Sea salt (adjust to taste)

–  1 can Black Beans drained

–  pinch Cayenne Pepper (optional)

Mix well all ingredients together in a bowl

Serve as a side relish dish or use as a salsa for nacho chips.

Famous saying goes: “We are what we eat”, or really what we can assimilate. The more you eat sugar, hydrogenated oils and processed foods as an example, the unhealthier your body becomes.   Even though you might not sense the negative changes immediately, you can be sure that your body will charge you later on for being neglectful.  Basically, key is with starting new, healthier ways of eating (not dieting) is to try to add more greens as much as possible.

Sometimes also changing little things that we eat daily or often can make a huge difference – ie if you drink diet pop, switch to just plain pop as the sweetener is sugar (most times) and not an artificial one, then maybe go to juice instead as it has less chemicals, then maybe add in more water (after all we are more than 70% water).  Instead of getting fires as a side order a salad – these seemingly little things can make a huge difference in your health and your weight.

www.jodiburke.com Greens like in Kamut, Barley, Wheat Grass, Spirulina and Chlorella.  They are loaded with Chlorophyll and Enzymes which is what our modern day diets are void of mostly!!

Chlorophyll is actually a green pigment found in plants, which serves its purpose of turning the solar energy into useful nutrients which plants use for food. Those nutrients created by using the energy of sun are actually as useful for us, as well as for plants. Although humans can’t use photosynthesis to create food, as plants do, eating plants rich in chlorophyll can help us heal our body and enhance our health. The greener they are, the more chlorophyll it has contained, which is great – it’s more alive – just like you and the more alive foods you eat the more alive you will feel and become!!

Foods with high concentration of chlorophyll are dark green. Green foods are rich in minerals, calcium, magnesium, vitamins and many other things that the body needs for optimum health.

In our modern day society supplements are often pushed on us instead of real foods, superfoods or herbs that have been around for centuries.  The body knows how to digest and utilize these foods easily and properly.

The body can heal itself when given the right environment.

There is so much I could write here about Green foods and Superfoods but instead why not share the passion and knowledge of a great leader who has done much research and worked with 1000’s of people to show that using these foods does work from the results people are getting.
