Wow, it kind of just snuck up on me.  I should have known as the days have gotten much shorter, but lately the weather here in Vancouver has been awesome.  Most days have been t-shirt weather, until today so I won’t complain!!

I just want to wish all my Canadian friends a wonderful and happy Thanksgiving weekend.  I will be spending tomorrow with my kids, before my daughter heads out to Banff to work for the winter – hard to believe but that time has come!

I have much to be thankful for and I hope you do too.  Whether you are Canadian or not, I hope you enjoy these easy, raw, vegan recipes, and yes they are gluten free as well and really can be eaten any time not just Thanksgiving.   Raw, Vegan Mashed Potatoes, Mushroom Gravy and Sunflower Seed Dressing so you won’t feel like you are missing out. Yes I love cooked mashed potatoes, my mom used to make the best. I try once in awhile and it’s never quite the same but will admit still tasty!!

So enjoy and I hope you incorporate more healthy eating and plant based recipes into your way of eating and living!!

Thanksgiving Recipes

–         1 head Cauliflower

–         ¼ cup Cashews

–         1 clove Garlic

–         ¼ cup Olive Oil

–         Salt & Pepper

Grind up Cashews until fine, set aside

Throw into a processor Cauliflower that has been cut up into chunks or big florets, add in garlic (either minced or cut up), salt and pepper to taste and process until fairly smooth.

You may have to scrape sides down a few times.

Add in ground Cashews and process further.

Add Olive oil while the processor is running in a little stream and process until well mixed and light.

Sunflower Seed Dressing

 

–         1 cup soaked Sunflower seeds drained ( soak for at least an hour up till about 6 hours)

–         11/2 cups Celery chopped

–         1 Onion chopped

–         4 – 6 chopped Mushrooms

–         1/2 cup chopped Parsley

–         1/2 cup chopped Sage (or other herbs)

–         Salt & Pepper to taste

–         1 tbsp ground Flax Seed

Thanksgiving Recipes

Grind up soaked Sunflower seeds but to fine – I like to leave coarse pieces

Place remaining ingredients into the processor and process until desired consistency (I like pieces so I do not process until smooth but it’s up to you if you prefer coarse or smooth like stuffing)

Stir in the processed Sunflower seeds and mix well together.

Place in a pie dish or glass dish and place in dehydrator and dehydrate for approximately 8 – 12 hours – depending on your temperature and how dry you like it.

Stir a couple of times as the out will be drier than the inside – kind of like how stuffing usually is, if you prefer a moisture inside, don’t stir J

Mushroom Gravy

–         10 medium sized Mushrooms cut up in a bowl

Add in 2 tbsp Braggs and 3 – 4 tbsp Toasted Sesame Oil, sprinkle with Himalayan Salt and mix well together.  Let stand for at least an hour, overnight is better.

Once soaked, throw in the mushrooms into the Vitamix, add in

–         ½ cup Cashews

–         1 clove Garlic

–         1 tbsp Rice Bran Solubles

–         Salt & Pepper to taste

–         ½ cup water, but only add half of it

 

Process until smooth and you will slowly add water from the top until desired consistency, thicker or thinner gravy.  You may need to add even a little more water if it’s too thick for you.

Love creamy pasta dishes – the raw way – and my fav is the creamy spinach mushroom pasta one!!  If you have never tried it before you may be in for a surprise.  Feel free to change the herbs, leave out or even change the veggies if you are not into mushrooms, like use red peppers, or zucchini or kale for an example.

 Easy and quick to make and the best part is very little clean up!!

Spicey Nuts

This raw spicy seed mix is an easy recipe – it just takes a little time.  These kinds of snacks are handy to have on hand when you are busy, rushed or didn’t get a chance to eat properly, are over hungry or need a little snack. This is one of the raw vegan recipes that are easy to make unless you use the oven then it may not be raw.  When buying nuts or seeds always make sure that they say ‘raw’ otherwise they will not be and most of the nutrition is not there any longer.

Pumpkin seeds are great for you especially when they are raw or sprouted.  I like making mine a little more spicy than this recipe but not everyone does so this is a good place to start.  If you like it spicy add more or double this recipe (not the seeds though) and if you don’t like it spicy omit the Cayenne and cut back on the jalapenos.

If you time it right, it’s easy to do – i.e. soak your nuts all day then dehydrate them through the night or vice versa.  Don’t be afraid to play with the spices or spice it up even more!

RAw Chocolate Mousse Parfait

 

Finishing up another Transformation Cleanse and feeling fantastic – I wanted to stay with eating light, raw and healthy – especially since the weather is so hot – it’s easier to do this at this time of the year.

Another raw and vegan recipe that is easy to make, tasty and can be loaded with lots of nutrition making eating healthy much easier, so much so I had it for breakfast 🙂

 

Raw Chocolate Mousse Parfait

 

–  2 large Avocados

–  1/4 cup Raw Cacao Powder

–  1/4 cup Agave

–  1 tsp Vanilla

Optional ingredients (and only suggestions but these can really increase nutritional value since these foods are very nutrient dense and therefore will stay with you much longer as in not getting hungry soon after) 1 tsp Spirulina,  1 tbsp Rice Bran Solubles, 2 tbsp Hemp, 1 tbsp Maca – you could  use all of them together and it would still taste amazing and really be filling!!

 

Throw all ingredients into a processor and process until smooth – adjust for taste.

Choc Mousse-3

 

Nut Crunch

–  1 tbsp Coconut Oil

–  1/4 cup Coconut sugar

–  1 tbsp Hemp

–  1 tsp Chia seeds

–  2 tbsp chopped Walnuts

In a frying pan, on medium heat, melt the coconut oil then add in the coconut sugar and stir until it thickens.

Then add in the rest of the ingredients to well mixed and continue to stir for about a min.

Remove from heat and spread on a cookie sheet. I like to keep my in the fridge but you don’t have to, once cool break it up into smaller pieces.

(this can be eaten on it’s own, add into salads, as topping on deserts or mixed into this chocolate mousse parfait)

 

Take some of the Chocolate Mousse mixture and put into a glass or bowl, then some nut crunch, then some fruit and keep layering 2 or 3 times.

Serve immediately and enjoy!

This will make two good servings or 4 smaller ones.

Love the summer months when everything is fresh and easy to eat more raw foods, more vegan foods and it tastes even better as most of it can be grown in your area – yummy!!

I love this recipe – and it can be changed up a few different ways, but here is one to get you started. This recipe is pretty quick and easy and of course tasty too – don’t be afraid to adjust amounts of things for your taste or add in some different herbs or spices.

 

Taco Filling

–    1 cup raw Walnuts

–    ½ cup fresh Parsley

–    1 tbsp Braggs or Tamari

–     1/2 cup fresh Cilantro (if you really don’t like Cilantro use Parsley)

–      juice of 1/2 Lemon

–       1 minced Garlic clove

Raw Tacos

 

Throw all ingredients into a food processor and process until desired consistency (you can leave it rather chunky or more smooth which just needs more processing – I usually go in the middle somewhere so there is a little bit of chunks of nut)

 

For these tacos I used the outer (as they are usually bigger) of Green Cabbage leaves

 

I chopped up some extra Cilantro, chopped Tomatoes, sliced Avocados, added a little Hot Sauce and topped with Alfalfa Sprouts and rolled it up.

Healthy eating doesn’t get much easier – enjoy!

Spirulina Wraps

I keep posting lately recipes with Spirulina as it is considered a Superfood and if you google the health benefits of spirulina you will see why!!  Just look at the dark green color –  loaded with nutrients and chlorphyll just to name a couple of things.

Not always pleasant tasting on it’s own but when you can mix it into things, you are only increasing the nutritional value and eating healthier which is cool by the way 🙂

This recipe looks a little funky, but makes a great snack and one you can carry for on the go! Totally raw and vegan, unless you need to use an oven – again still better than many other options when one is trying to eat healthy.  This recipe makes approx 8 – 10 rolls so you can always double it and put in sealed container (once they are dehydrated).

Spirulina Wraps

–         1 small Onion chopped

–         1 cup raw Sunflower seeds (soaked or unsoaked)

–         ½ cup raw Sesame seeds

–         ½ cup fresh Cilantro

–         ¼ cup Nutritional Yeast

–         juice of 1 Lemon

–         pinch Himalayan Sea Salt

–         1 tsp Spirulina (Purium’s Spirulina)

–         Spices (optional)

Throw all ingredients in a processor and process until desired consistency (either a little chunky or rather smooth)

Spirulina Wraps

Approximately 5 Raw Nori sheets – yes you can buy Nori sheets raw – it will say right on the package, a little harder to find and if you can’t then of course you can use regular Nori sheets (not raw but still healthy).

Cut into 3 pieces as even ½ a sheet will be too much.

Put a line of the mixture on each piece and roll up (I used a Sushi mat to help with the rolling).

Spirulina Wraps

Put in dehydrator and dehydrate for approximately 12 – 14 hours.

Keep in a sealed container and it will keep for a couple of weeks.

Great for a quick on the go snack and loaded with nutrition!!

Wow – loving the summertime!! So much fun in the sun, markets, beach, dancing to the drums as the sunsets on the beach – what a view, street markets and events, gatherings and well I could go on.  Oh and a little work in there too!! 🙂 Love summer, it’s been hot, making sure I am drinking lots of good water )fresh from the spring in North Vancouver) and it’s a good time for ice cream – raw / vegan style.

This Chocolate Hazelnut Ice Cream is easy to make, I think pretty tasty too and it makes eating healthy pretty easy to do, not too mention raw & vegan – you won’t feel like you are missing anything!!  It’s a sweet treat but a healthier version and in this heat – we like cold treats!

Ban Hazelnut_-3

–  5 frozen Bananas

–  ½ cup Hazelnuts

–  2 tbsp raw Cacao

– Throw all ingredients in a processor or blender and blend until well mixed and smooth, make taking scraping down the sides often.

At the very end of when being served sprinkle on some raw cacao nibs – eat and enjoy!!  Can be kept in a covered container in the freezer for a few days if you are not going to eat right away or this recipe makes2 – 4 servings depending on the amount you serve in a dish!!

With this weather of summer finally being here it is so easy to eat more raw foods, eat healthier, eat fresh and fast- not that we want to eat fast but fresh, natural food really is fast food as it’s best!!

–  1 cup julienne Green Zucchini

–  1 cup julienne Yellow Zucchini (or called also Summer Squash)

–  1 cup chopped Parsley

–  1/2 cup chopped Chives

Add in

–  4 tbsp raw Pumpkin Seed oil (optional but oh so flavorful – I just found this amazing tasting raw, cold pressed oil a short time ago and fell in love with it – it is very nutritious but also tasty and adds a beautiful flavor, if you are unable to find it or have other oils on hand like Olive oil it will work – you may want to add another herb or more garlic for a little more flavor)

–  2 tbsp White wine Vinegar

–  2 cloves Garlic minced

Pinch Salt and Pepper

–  3 tbsp Pine nuts (optional you can roast / toast these – I didn’t for this recipe)

This is so tasty you won’t be feeling guilty!!  And when you use real raw cacao – it has nutritional benefits – not that that gives you the excuse to eat it all the time or tons of it.  To think that healthy, nutritional things can actually be really tasty and easy to make – well makes life more fun I think!! 🙂  This is raw and vegan – but you wouldn’t know it!!

Chia has been around for a very long time – it was used  for centuries by the Aztecs of Mexico and the Indians of the Southwest of America, these tiny seeds formed part of their staple diet.  Aztec warriors were said to use Chia to as a high energy ‘supplement’ on their conquest.

Google Chia as there are many stories on it since it’s been around for so long and it has many health benefits – especially again a good source of protein and omega-3 oils, a lot of nutrients, antioxidants and fiber.  Not bad for a tiny little thing!!

Due to their antioxidant qualities, chia seeds don’t go rancid as quickly as flaxseeds do. Store Chia in a glass jar or in a sealed container to help keep it longer.  Ground chia seeds should be placed in a container with a tight-fitting lid, and may also keep a month or more.

You can add Chia to many things but when you add it to a liquid remember it will become gelatenous – therefore can make good puddings or thickener!!

–  2 tbsp Chia seed in 1 cup water and let soak for at least an hour – the longer the better as the softer the seed becomes but it will work with an hour.  It will become gelatenous and I did add a little more water to mine as it got a bit too thick, add up to 1/2 cup more of water if it is too thick

–  3 tbsp raw Cacao Powder

–  4 tbsp Agave (or Honey or Brown Rice syrup)

–  1 Avocado (or you can also use 2 Bananas or 1 peeled Mango)

the fruit will make it a little more sweet than the Avocado so you can always cut the sweetener back a tbsp

–  1 tsp Vanilla

Once the Chia has soaked for at least an hour, throw all ingredients into a Vitamix or Blender and blend until smooth.

If you are going to serve it right away, throw in 2-3 ice cubes to make it cooler.

What I had for breakfast today was the pudding with the Cashew Whip and a cut up Banana, Blueberries and Strawberries

This is one of my favorite things to eat.  I have a smoothie almost every morning but when I don’t this is the next best thing.

It’s easy and quick to make, tasty and will keep for several days in the fridge.

I add in some raw granola that I make (recipe to follow soon – I just make it and need to really get the measurements down clearly :)) but it’s just as tasty with just fruit!!

For anyone who kind of, sort of misses whip cream (the dairy kind) this is a great substitute – it’s raw, it’s vegan and has protein!!

–  1 cup Raw Cashews (if the nuts whether in a package or bulk don’t say raw, then they aren’t, and it will make a difference, and will probably be heated some how and flavors maybe added)

soak for at least 15 mins but you don’t have to, this will make the cashews softer

–  1 tsp Vanilla

– 1-2 tbsp sweetner Agave, Honey (not Vegan) Brown Rice Syrup, (depending on how sweet you like it)

–  4 ice cubes (only use if you want to eat it right away it makes it cooler)

Start with 1/4 cup water

Throw all ingredients into the Vitamix or blender and start blending.  You will need to add more water until desired consistency.  I don’t like mine too runny but not too thick either.  It’s not as fluffy as whip cream but it’s so much tastier and healthier!!  These little differences can make eating healthy so much easier – in more ways than one!!

 

Cut up some fruit in a bowl and pour over top – and enjoy!!  Add some cereal or nuts or hemp if you like!!

What the heck – raw popcorn??

It’s probably not what you think!!

One of the things I do love is popcorn especially with a really good movie – which I don’t do often so it’s a treat.  I always make sure its Organic so it’s non-gmo as corn is high on that list.

This though is a really good, nutritious and tasty treat substituting for popcorn that lets face it is just totally healthier period.   It’s raw (not everyone agrees on nutritional yeast being raw) but totally vegan and gluten free for sure!!

When I used to go to the movies at a theatre it was a big treat for me to get popcorn and I would get a large and eat it myself – yes I do love popcorn!! Since cleaning up my way of eating, the last time I went to a real movie theatre and ate popcorn I felt it for 2 days in my system and felt horrible – bloated and just yucky – I seem to be more sensitive to chemical crap since cleaning things up lesson learned!!

My daughter came home this past winter after being at the movies and a couple of days later said the same thing to me – I try hard not to inflict my judgments on my kids so it was kind of neat to hear her say that and that she wouldn’t be eating popcorn at the movies again – which she hasn’t and she loves popcorn as much as I do!!

If you love popcorn too hope you enjoy this way – you may not the first time but it does grow on you!!

–  1 head Cauliflower chopped into small pieces

–  Himalayan Sea Salt

–  1 – 11/2 tbsp Nutritional Yeast (good for B vit’s and found in health Food Stores and a lot of grocery stores now)

– 1 tsp Spirulina (optional) Purium’s Spirulina

Put cut up cauliflower into a big zip lock bag and add in sea salt, nutritional yeast and spirulina (optional) shake till well coated.

Both are shown in the bag here – one with Spirulina and one without it.

Raw Popcorn

Put into a bowl and grab a cool drink and a good movie, eat and enjoy!!

It’s also a very good snacking treat if you are needing a mid afternoon snack or too busy working – will keep in fridge for a couple of days in sealed bag as well!!
