Swiss Chard Salad
I don’t know about you, but I am not craving a lot of salads these days when it’s pretty cold and damp!? This is kind of the best of both, still getting greens, some raw and some warming food. This can be a meal in itself or as a side dish.
-1 cup brown rice (or any kind you like)
-2 – 3 oz cold pressed olive oil
– 2 oz Braggs (or Tamari or even Soya Sauce but use less of it)
– juice of 1/2 lemon
– 2 garlic cloves
Mix all up together in a bowl
-1 head chopped swiss chard
-1/4 cup chopped parsley
chopped cilantro (optional)
-1 red pepper chopped
Mix in all together.
Sometimes I will add in chili peppers to give it some spice and then chopped avocado as well.
